Hearty Chicken Noodle Soup

INGREDIENTS

1 Tbsp olive oil

3 stalks celery, chopped

3 carrots, chopped

1 onion, chopped

6 cups low sodium chicken broth, or broth made from scratch

2 chicken breasts, grilled and cooked separately

1 can chickpeas, rinsed and drained

1/4 cup strained tomatoes

2 cups orecchiette pasta

1/2 cup fresh parsley, chopped

juice of 1 lemon

INSTRUCTIONS

  1. In a large soup pot, sauté the onion, celery and carrots with olive oil for 3-5 minutes.

  2. Add stock and bring to a boil.

  3. Add pasta and cook until softened.

  4. Add chicken breast chickpeas, and strained tomatoes, turning the heat down to a gentle boil.

  5. Serve hot, topped with fresh parsley and lemon juice.
